I choose positivity. I’m telling you, I will not be deterred by what I see. I will, however, recommend my blog, The Power of Voting. This is food blog week and it will be published on Cinco de Mayo, or, May 5. I have a fantastic Fire Roasted Salsa that I’ve been making for years. As a result, this year will be like most others. Chips, Salsa, a good Margarita and, of course, the game. Well, given the current state of affairs in the world, maybe a couple of Margaritas. And Xanax.

Contrary to what some believe, Cinco de Mayo is not Mexican Independence Day, (September 16). It is intended to celebrate the victory of the Battle of Puebla, in which the Mexicans triumphed over the French in 1862. Brought to this country by FDR in 1933, as a part of his effort to improve relations with Latin American countries, it is celebrated with street festivals in major cities. A celebration of Mexican culture and their enormous contributions to the world. 

 

Chips and Salsa

One of my favorite spots in LA has always been downtown. Olvera StreetUnion StationPhilippes the Original, all within walking distance. When I was a tour guide, I would plan extra time for my guests to roam around in that scenic and historic area. In addition, enough time for me to get taquitos, a French dip sandwich, and a Horchata. After that, sufficient walking it off time before getting back on the coach to entertain. Praying for a long drive to the next stop so I could put on some music, my sunglasses and quickie nap. Over eating Mexican food. It’s a wonderful thing.

 

Healthy, Vegan friendly

Mole Poblano, is the official dish of the holiday. This rich, dark brown sauce, made with Mexican chocolate and a ton of spices and nuts, hails from the town of Puebla. While not a federal holiday in Mexico, the US recognizes Cinco de Mayo as a national holiday since 2005. Predominantly in the 1960s and 70s, it had close ties to the Chicano Rights Movement. Used as a call to action to inspire an often overlooked community, it is now celebrated around the globe. Places like Canada, Australia and Japan, to name a few. So, happy Cinco de Mayo! Make this salsa, have some chips and a margarita!

Fire Roasted Salsa

Equipment

  • 1 Baking sheet lined with foil
  • Blender
  • cutting board
  • Chefs knife

Ingredients
  

  • 4 Roma Tomatoes or 1lb Cherry Tomatoes
  • 3 Jalapeno peppers, medium (for spicier use serrano)
  • 1/2 onion, separated
  • 5 garlic cloves, skins on
  • 1 Tbsp olive oil
  • 1 cilantro bunch, handful of leaves, chopped
  • 1 Tbsp salt, or to taste
  • 1 juice of 1 lime
  • 1 tsp black pepper
  • a couple glugs of your favorite pepper/hot sauce (optional)
  • pinch cumin and sugar (optional)

Instructions
 

  • Preheat oven to broil. Line a baking sheet with foil. Cut the stems off the tomatoes, then cut them in half. Place on sheet. Add 1/2 onion, separated or cut into chunks. Add garlic cloves skins on. Cut stems off jalapeno peppers. Add to sheet. Drizzle with some olive oil and toss all of the vegetables around in the oil until completely coated.
  • Place the vegetables in the broiler and roast for 5 to 15 minutes. Stirring once halfway through. The vegetables should be shriveled, blistered and charred. After roasting, remove from the oven and allow to sit a few minutes to cool.
  • Remove skins from garlic. Transfer the vegetables and the juices from the baking sheet into a blender or food processor. Add lime juice, cilantro leaves, salt, pepper and a few glugs of pepper/hot sauce (optional). Can also add a pinch of cumin and sugar if desired. Pulse the ingredients until they are well mixed but still slightly chunky. Don't over puree on the first round so that you can taste the mixture, adjust the seasonings and blend again if necessary.
  • Serve immediately or let refrigerate over night for a more mellow flavor.

At the end of March, some friends and I appeared on a game show called “America Says”.  It’s a throwback kind of show to the days of Family Feud and Password. Our team, “The Medical Workers” are contractually bound not to disclose the results of the show. However, on next week’s blog, I will recap my experience. As the show airs on GSN, which is the Game Show Network, it’s a premium channel that all will not have access to, including me. (We plan to have a watch party at one of the team members’ house).

 Game Show Network, is their website where they say episodes are available to view on a rotating basis, however, may not be available at the same time as the air date. Below is a sample clip of the show. I hope you get a chance to see it. My incompetence should come as great humor to those who view it. A good laugh is in store. I feel more margaritas and Xanax on the way. Note to self, make more salsa.

    Hola Chris!

    First, all I had to do was read the ingredients to know this was a great salsa. Second, I’m still unpacking so as soon as I find the lemon thin (i forgot the leavening ratio) I will send it and lastly I so miss Olvera street! I never got to take the rail there yet.

      I had to for-go the first part of this blog. My stomach found out how old it is and revolted against anything that is spicy no matter how good it tastes! However, I was on the Game Show Network several years ago. Francheska recruited several ECFMG employees to audition with her for a game show. We auditioned and nothing came of it, However, my name got on a ‘list’
      and I tried out for a game show called ‘1 vs 100’ and became a contestant. It was great fun and I also won $10,000 Now all the game shows seem to want groups and I can’t find enough people who are interested. If you ever need an extra person, let me know.
